Ok, so I’m not the biggest fan of Godon Ramsey but I caught this segment on FoodTV last year during the holidays and just fell in love with the recipe.

A slightly updated version of beef wellington, the recipe calls for parma ham instead of bacon to wrap the beef plus a Christmasy twist with chestnuts added to the mushroom filling for the beef wellington takes it over the top.  From start to finish you’re at about 45 minutes, so it definatley is one to keep in mind for the holidays!
